The study from Penn State[i] looked at 72 healthy and well-nourished women. Blood tests discovered that some of the women were iron deficient and others iron sufficient, then the samples were examined in several immune response tests. One test looked at the white cell count, otherwise known as T-cells, which are able to multiply and fight infection. It was discovered that the white cells in the iron deficient blood samples were only multiplying at half the rate of the white cells in the iron sufficient blood samples, which means that immune levels were literally halved due to iron deficiency.
